Low-Waste Lunch Ideas for Everyday 

Packing lunch every morning, whether it’s for work, school, or anything else, doesn’t have to be complicated. You don’t have to wake up thinking, “What am I even supposed to take today?” And it definitely doesn’t need to leave behind a pile of trash from plastic packaging, disposable cutlery, or single-use containers.

If you want a simple, low-waste way to keep lunch easy and interesting all week long, there’s a formula that takes care of all that. Just mix and match a few basic ingredients, and you have a full, satisfying meal. It’s like building your favorite grain bowl, but without the waste or the trip to go pick it up.

🥬 Step 1: Pick Your Base

Choose two or three things to prepare at the start of the week. These options might include:

  • Grains: rice, quinoa
  • Veggies or starches: roasted potatoes, sweet potatoes, pasta
  • Greens: kale, lettuce, spinach

 

For extra crunch: toasted seeds, nuts, shredded cabbage or slaw. 

Remember to store everything in clear containers and label them so they’re easy to find and use.

Choose two or three proteins you like and cook them ahead so they’re ready when you need them. Some ideas are tofu or tempeh baked, pan-fried, or marinated; hard-boiled eggs; lentils, chickpeas or veggie burgers.

Veggies make your lunch colorful and fresh. Wash, chop, and store a mix of raw and cooked vegetables at the beginning of the week and you’re all set.

  • Raw veggies can include cucumbers, cherry tomatoes, carrots, and bell peppers.
  • Cooked veggies might be roasted broccoli, squash, or eggplant. Spread them on a baking sheet, toss with a little oil and seasoning, and roast in the oven.

A good sauce brings everything together. Make one or two to keep in the fridge so they’re ready to go. Some ideas include hummus, homemade vinaigrette, or salsa. The options are endless.

  • For extra flavor, try toppings like crushed seaweed, a squeeze of lemon juice, or a spoonful of pesto.

Keep your ingredients in reusable containers so you can put lunch together in minutes. Use divided containers to keep things separate until you’re ready to eat. You can mix and match in countless ways, so you get a unique and tasty meal every day.
