Recipe | Vegan Holiday Sugar Cookies

Ingredients

  • 1 cup vegan butter slightly softened
  • 1 cup granulated sugar
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 1 teaspoon pure vanilla extract
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 small pinch of salt
  • 3 tablespoons of holiday sprinkles

 

Directions

  1. Prepare your flax egg by mixing the ground flaxseed and water in a small bowl. Let it sit for at least 10 minutes.
  2. Preheat oven to 400 F and get the middle rack ready.  Line a baking tray with parchment paper.
  3. Cream the vegan butter and sugar together in a large mixing bowl (hand or stand mixer)
  4. Add the flax egg and vanilla extract to the bowl. Mix on low.
  5. Whisk the flour, baking powder, and salt together in a mixing bowl.
  6. Gradually add the flour mixture to the butter/sugar mixture.  Mix on low until the flour is incorporated (no more white powder).
  7. Fold in the sprinkles.
  8. Gently roll the dough into 1.5" balls (or use a cookie scoop). Give the cookies a few inches room, as they will expand.  You may need to bake two batches.  Bake for 10-12 minutes.
  9. Transfer cookies to a cooling rack.  Keep them in an airtight container so they stay soft.

The Story

These cookies are easy to make, as they don't need any chilling or decorating.  Change up the sprinkles to fit the mood of the party.  The cookies are soft, which makes it easier to eat more of them.  A crowd-pleaser for everyone, not just vegans.
